Lari Chicken

If you're reading this, chances are you need a quick, tasty meal without the hassle. Whether you're too busy, too tired, or just looking for something healthy and fresh, I understand. That's why I want to share a favorite dish of mine that requires minimal effort.
Introducing Lari Chicken, a comforting meal from my childhood in Lar, a small city in the south of Iran. It features boneless chicken, creamy yogurt, and fresh onions, seasoned simply with salt and pepper. Simple ingredients, but so flavorful!
Ingredients:
- Boneless chicken
- Yogurt
- Onions
- Salt and pepper
- Optional: Saffron, potatoes, tomatoes, turmeric, olive oil

Storage Instructions:
- Refrigerator: Keep the marinated raw chicken in the refrigerator for 1 to 2 days.
- Freezer: Freeze for up to 3 months. Thaw in the refrigerator overnight before cooking.
Flexible Cooking Options:
- Air Fryer: Place in an air fryer at 180 degrees for 20 minutes.
- Oven: Preheat to 180 degrees. Mix a pinch of saffron with boiling water and let it brew for 10 minutes. Combine this saffron water with the yogurt and coat the chicken evenly. Arrange the chicken in an oven safe tray —for optimal heat distribution I use stainless steel trays, these are not only faster at cooking but also easy to clean. Add sliced potatoes and tomatoes, drizzle with olive oil, and give everything a good mix. Bake for 40 minutes, checking at 20 minutes, as oven times may vary. For a crispy finish, switch to the grill mode for the last 10 minutes.
- Pan: Heat some oil in a pan over medium heat, add the chicken and a bit more yogurt along with a dash of turmeric (optional) and a little water. Let it simmer for about 20 minutes. Then add sliced potatoes and tomatoes and continue to cook for another 20 minutes on medium heat. After adding the tomatoes and potatoes, sprinkle in the saffron, and adjust salt and pepper to your taste. The dish is ready when the chicken is thoroughly cooked and the sauce is not too watery.
- Barbecue: Perfect for sunny weekends, you can grill the marinated chicken on a barbecue or thread it onto skewers. This traditional method brings out a fantastic charred flavor that's hard to resist.
