A legacy from my bakery cafe in Iran—simple, juicy, and loved by everyone who’s tried it.




Back in my bakery cafe in Iran, I once asked my kitchen assistant to get some ground beef for a meal—I honestly don’t even remember what I was planning to make. But he brought the wrong cut of meat, and I really don’t like wasting ingredients. So I thought, okay, let’s mix in some spices and see what happens if we grill it.

We tasted it and were like, wow, this is actually really good! I told the team, “You know what? Let’s turn it into a burger and put it on the menu, just to see how it goes.” And it turned out to be one of the most popular items we had.

To this day, I haven’t met anyone who didn’t love these burgers—and now I’m so happy I get to share them with you here in the Netherlands.


Ingredients:

  • Ground beef
  • Salt and pepper
  • Nutmeg
  • Cumin
  • Garlic


Storage Instructions:

  • Refrigerator: Store the raw ground beef in the refrigerator for up to 2 days.
  • Freezer: Freeze for up to 3 months. Thaw in the refrigerator overnight before use.


Cooking Method:


  1. Grill: Heat your grill to medium-high. Place the patties on the grill and cook for about 3-4 minutes on each side for medium-rare, or longer, depending on your preferred doneness.
  2. Pan:Heat a little oil in a non-stick or cast iron pan over medium heat. Place the patties in the pan and cook for about 4–5 minutes per side for medium doneness. If you prefer them more well-done, cook for an extra minute or two per side. Avoid pressing down on the patties while cooking—this keeps them juicy.
    If you're adding cheese, place a slice on top during the last minute of cooking and cover the pan briefly to let it melt.


Serving Suggestions: These burgers go great with a side of fries, a fresh salad, or just a simple batch of onion rings. Enjoy the taste that brought joy to many back in Iran, right here in your home!
